The number one sweet snack in my Paleo pantry is the almond butter chocolate chip cookie.
One word for this one, BEAST. If you struggle to satiate your sweet tooth then this is the answer and the only answer in my opinion!
Almond Butter Chocolate Chip Cookies
An absolute beauty if you have a sweet tooth! Great snack to enjoy on the Primal Diet, but definitely not one to over indulge on. You've been warned..
- 1/4 cup melted coconut oil
- 1/4 cup almond butter
- 1/3 cup coconut sugar
- 1/2 egg
- 2/3 cup almond flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp cream of tartar or 1/4tsp lemon juice
- 1/3 cup dark chocolate chips
Preheat oven to 180C.
Combine coconut oil, almond butter, sugar and egg (and lemon juice if using) in a bowl and mix well
In a separate bowl, combine the almond flour, salt, baking powder and cream of tartar. Add to wet ingredients and stir to combine.
Add the chocolate chips and stir to combine. Let dough cool in the refrigerator for 20 minutes (essential!)
